Vegan & gluten-free banana and blackcurrant waffles

These waffles are so easy to prepare and a great way to use up bananas. The combination of buckwheat and almond flour also makes this deliciously sweet enough treat gluten free!

120g buckwheat flour

25g almond flour

1 ripe banana mashed

3 tbsp low fat Greek style vegan yoghurt

2 tbsp maple syrup

½ tsp baking powder

1 tsp vanilla bean paste

2 tbsp coconut milk or any nut milk of choice

4 tbsp Streamline less sugar blackcurrant jam

  1. Put all ingredients in a food processor and blend until it creates a smooth waffle batter.
  2. Spray a waffle pan with non-stick cooking spray and heat up the waffle iron.
  3. Add 3 tbsp of batter at a time and cook the waffles until desired texture!
  4. Add black currant jam on top and spread it along the waffles and enjoy with a hot cup of tea !
