Liven up your stir fry by adding a fruity blackcurrant twist to this healthy family favourite!
Turkey Blackcurrant stir fry
1 head broccoli, cut into florets (275g) 250g kale 1 tbsp oil 1 red onion, sliced (170g) 450g diced turkey breast 4 level tbsp Streamline Blackcurrant Jam (60g) 1-2 tbsp balsamic vinegar
- Cook the broccoli and kale in boiling water for 3 minutes and drain well.
- Meanwhile, heat the oil in a large frying pan and fry the onion and turkey for 5-6 minutes until browned. Add the vegetables and cook for a further 2 minutes.
- Mix the blackcurrant jam with vinegar and add to the pan. Stir fry for 1-2 minutes, until the turkey is cooked throughout.
