Sweet Potato Croquettes with a Spicy Strawberry Sauce

Crunchy air-fried croquettes with a delicious dipping sauce.

2 cups of cooked and mashed sweet potatoes
Sea salt to taste
Cracked pepper to taste
1 cup of dry breadcrumbs
1 egg, beaten
30g of corn flour
50ml of water

Sauce:

60g of Streamline Less Sugar Strawberry Jam
1 garlic clove finely chopped
1 tbsp or 15ml soy sauce
Salt and pepper to taste
½ tsp of chili powder

1.  Add sweet potatoes, salt and pepper to a bowl.
2.  Chill for 15 min
3.  Take the mixture out of the refrigerator and scoop the mashed potato mixture into the desired shapes.
4.  In a small bowl, add the corn flour, 100 ml of water, and beaten egg and mix.
5.  Dip the croquettes into this mixture and then and dip each in the breadcrumbs.
6.  Put the breaded croquettes in an air-fryer for 20 min or until they are golden brown.

For the sauce:

7.  Mix the strawberry jam, soy sauce, salt and pepper and chilli powder along with finely chopped garlic.

8.  Transfer to a saucepan and slowly cook for about 10 min until the sauce is caramelised.
