Strawberry fool with a twist

A twist on the traditional fruit fool dessert, our version is wonderfully decadent and has great chemistry but without all the calories. It’s the perfect sweet treat for your Valentine!

100g Low-fat double cream

100g Greek yogurt (full fat or low fat)

30g Streamline Less Sugar Strawberry jam

30g Rolled oats

In a non-stick pan, dry toast the rolled oats until light golden brown (this should take about 1-2 mins).

Beat the double cream until it creates stiff peaks and mix gently with the Greek yogurt using a spatula.

Take two glasses of your choice, add a 1 tbsp of jam at the bottom of the glasses. Scoop in the Greek yogurt and double cream mix on top of the jam mixture, or fold in if your prefer, and add some crunchy toasted oats and fresh fruit as desired.
