Quick and Easy Grilled Aubergine

Enjoy this tasty, warm aubergine recipe

  • 1 large aubergine or 400g of sliced aubergine
  • A few sprays of olive oil from a spray bottle
  • Sea salt to taste
  • 40g of Streamline Less Sugar Marmalade
  • 40g of Greek yoghurt
  • 1 tsp chilli pepper flakes
  • 1 tsp garlic powder
  • A handful of coriander leaves (finely chopped)
  • 1 lime
  • 1 tsp of cumin seeds (optional)
  • Slice the aubergine and spray with olive oil; add sea salt and allow to marinate.
  • Take a kitchen brush, dip in the marmalade and brush the both surfaces of the aubergine slices – this will help with an enhanced marmalade taste as well as achieving the beautiful caramelization on the top.
  • Take a grill pan, spray with oil and add the egg plant slices.  Cook both sides for 2.5 min each until the insides are soft and the outside caramelized.
  • Add the rest of the marmalade, cumin seeds, Greek yoghurt, coriander, sea salt, chili flakes, and lime to a bowl and mix well to combine.
  • Pour the dressing over the warmly grilled aubergine, season more with chili flakes, a squeeze of lime and some fresh coriander.
