Gluten-Free Fruity Flatbread

A delicious, quick an easy gluten-free flatbread topped with fruit and mozzarella.

 

180g sifted almond flour plus for dusting

1 egg

40g thick Greek yoghurt

Pinch of salt

1 tsp of baking powder

 

Toppings:

40g Streamline blackcurrant jam

30g mozzarella cheese

Berries of choice

  1. Add the yogurt, almond flour, baking powder, egg and salt to a large bowl.  Mix until a dough forms.
  2. Transfer the dough to a lightly-floured surface and flatten into an 8-inch (20 cm) disk.
  3. Cut the disk into 2 equal parts and flatten each part to about ¼ inch (6 mm) thick.
  4. Very carefully transfer the dough pieces to a non-stick pan preheated over medium heat.
  5. Cook each side of the flatbread until well browned.
  6. Add jam, cheese and fresh berries and enjoy!
