Caramalised strawberry tartine with toasted pumpkin and rocket

Bored of your usual lunches? Try this Scandi-style open sandwich packed full of flavours!  It’s super quick and easy to make.

80g of Streamline less sugar strawberry jam

2 tbsp pumpkin seeds

A handful of fresh rocket

3 tbsp of low-fat cream cheese

2 slices of seeded brown bread of choice

Heat the strawberry jam in a pan and slowly caramalize while stirring. This will take approximately 1.5 min. The jam will come to a boil and the natural sugars from the strawberry jam will caramalize and will start thickening; remove from the heat and set aside.

In a clean, dry pan, add the pumpkin seeds and toast for about 2 min whilst regularly shaking the pan to prevent the pumpkin seeds from burning; set aside once done.

In a small bowl, add the low-fat cream cheese and whisk until it creates a thick whipped up texture.

Lightly toast the brown bread, spread a layer of whipped cream cheese using a spatula, add fresh rocket and top with cramalized jam and toasted pumpkin seed
