Add an extra burst of colour to your BBQs with this light and fruity summer salad. Minimum effort, maximum flavour!
Beetroot & Spinach Salad with a Strawberry Balsamic Dressing
• 2 large beetroots peeled and boiled (For about 12 minutes depending on how crunchy you want your salad to be.)
• 125g of spinach, washed and finely chopped
• 50g of mature cheddar cheese cut into cubes (alternatively you can use any cheese you like)
• 50g of Streamline Strawberry Jam
• 30ml of balsamic vinegar
Simply mix the jam and vinegar and leave it covered for 20 min. Mix well and pass through a sieve to get a clear dressing !
Dice the boiled beetroot and cheese and add them to a large bowl
Stir in the chopped spinach
Pour over the desired amount of dressing and toss the salad to combine all the delicious flavours.
