Baked Sweet Potato with Warm Spicy Marmalade

A delicious alternative to baked potato with cheese and beans .  Perfect for those autumnal evenings.

2 sweet potatoes

2 tsp garlic powder

1 green chilli

½ tbsp garlic powder

1 tsp pepper

50g of Thick or Thin Cut Streamline Marmalade

20g of chopped coriander leaves

2 crushed garlic cloves

50ml water

40g of thick Greek yoghurt

Slice the sweet potatoes lengthwise, add salt and pepper; Bake it at 180c for 10 min.

Add the marmalade, garlic powder, chopped green chillies, water and crushed garlic to a pan and cook until it creates a thick sauce.

Pour the sauce over the half-baked sweet potatoes and bake for a further 10 min until they are fully cooked.

Top with coriander leaves and Greek yoghurt

Serve hot
