Scones with Streamline Strawberry Less Sugar Jam

Light & Fluffy Classic Scones

Scones are a wonderful British teatime treat. This heavenly combination of scone filled with soft cheese and Streamline strawberry jam is quick to make yet lower in fat and sugar. Serve still lightly warm for the best taste ever.

 

250g self-raising flour

1 tsp baking powder

pinch of salt

25g butter

1 tsp clear honey

1 large free range egg, beaten

about 100ml soya milk

100g-125g Streamline Less Sugar Strawberry Jam

150g-175g low fat soft cheese 3% fat

1 Preheat the oven to 220C/fan 200C/Gas 7.  Line a baking sheet with baking parchment. Sift the flour, baking powder and salt into a mixing bowl. Rub in butter until mixture resembles crumbs.

2 Mix together the honey, egg and enough of the milk in a measuring jug until mixture measures 150ml. Pour into scone mixture and stir to form a dough.

3 Turn dough out onto a lightly floured work surface, knead lightly and roll out to 2 cm thick. Using a plain or fluted 6cm round cutter cut out 8 scones. Reroll any trimmings. Place on the prepared baking sheet well spaced apart . Brush with remaining milk and bake for 8-10 minutes, until well risen and lightly golden.

4 Remove the scones from the oven and transfer to a wire to cool slightly. Serve each whilst still warm with ½ tablespoon strawberry jam and soft cheese.
